Deep-fried Salted Egg Encrusted Soft Shell Crab

COOKING METHOD

  1. Clean and cut soft shell crab into 6 pieces
  2. Add crispy flour mixture, oil and water together in a mixing bowl and whisk to form a batter
  3. Pre-heat a pot of oil to 180°C for deep-frying
  4. Coat the crab with the batter and deep-fry in the pot until golden brown. Set aside
  5. In a separate pan, melt margarine and stir-fry salted egg and sugar until bubbles are formed
  6. Turn off fire; add the golden brown soft shell crab into the pan and toss in the salted egg mixture until well-coated
  7. Serve hot

INGREDIENTS

  • Soft Shell Crab – 2 crabs
  • Cooking Oil (for deep-frying)

FOR BATTER

  • Crispy Flour Mixture – 150g
  • Oil - 35ml
  • Water – 180ml

For Salted Egg Mixture:

  • Salted Egg yolk – 30g
  • Margarine – 15g
  • Sugar – 3g
