Deep-fried Salted Egg
Encrusted Soft Shell Crab
COOKING METHOD
- Clean and cut soft shell crab into 6 pieces
- Add crispy flour mixture, oil and water together in a mixing bowl and whisk to form a batter
- Pre-heat a pot of oil to 180°C for deep-frying
- Coat the crab with the batter and deep-fry in the pot until golden brown. Set aside
- In a separate pan, melt margarine and stir-fry salted egg and sugar until bubbles are formed
- Turn off fire; add the golden brown soft shell crab into the pan and toss in the salted egg mixture until well-coated
- Serve hot
INGREDIENTS
- Soft Shell Crab – 2 crabs
- Cooking Oil (for deep-frying)
FOR BATTER
- Crispy Flour Mixture – 150g
- Oil - 35ml
- Water – 180ml
For Salted Egg
Mixture:
- Salted Egg yolk – 30g
- Margarine – 15g
- Sugar – 3g
